Enjoy a new tradition at Lassen's Resort with a historic twist. Prepared exclusively for The Museum at Lassen's Resort by Chef Erik A. Hinds, these ice box tarts take inspiration from the ice box cake - a turn-of-the-century layered dessert that was named after the appliance it was made in. $5 per serving. Choose from:
Roller Rink Milkshake: Chocolate malted mousse drizzled in salted caramel topped in white chocolate shavings hand-piped into a crispy Norwegian Rosette cookie cup. Flavor inspiration: The Cedar Lake Roller Rink sold frozen Milkshake candy bars. The nougat in a Milkshake bar was coated in malt which enabled it to be placed in the freezer and achieve a texture similar to ice cream. (pictured above)
Sunset Dreamsicle: Orange and vanilla frozen mousse hand-piped into a crispy Norwegian Rosette cookie cup, sprinkled in edible orange glitter. Flavor inspiration: Sparkling orange sunsets over magnificent Cedar Lake that everyone can enjoy daily in the rocking chairs of The Museum at Lassen's Resort wraparound porch.
Binyon's Berry Pie: Strawberry and blueberry mousse hand-piped into a crispy Norwegian Rosette cookie cup, topped with berry granola crumble. Flavor inspiration: The Binyon family moved to the east side of Cedar Lake about 1877. John and Christopher purchased land to establish Binyon's Resort hotel and restaurant. It was famous for its wonderful home cooking. In addition to 25 cent chicken dinners, the restaurant was known for its homemade fruit and berry pies.
