Enjoy a serving of craft-made, small-batch ice cream, made with the finest, all-natural ingredients and no preservatives - prepared exclusively for The Museum at Lassen's Resort by Chef Erik A. Hinds. Choose from:

Binyon's Berry Pie: a fresh mixed berry compote folded into vanilla ice cream and topped with a graham cracker crumble. Flavor inspiration: The Binyon family moved to the east side of Cedar Lake about 1877. John and Christopher purchased land to establish Binyon's Resort hotel and restaurant. It was famous for its wonderful home cooking. In addition to 25 cent chicken dinners, the restaurant was known for its homemade fruit and berry pies.

MINiaTure Golf Chip & Putt: mint flavor ice cream with chocolate chips. Flavor inspiration: From the late 1940s to early 1950s, a small carnival-like area operated south of the present-day Dairy Belle and included kidde cars, miniature golf, a dance hall, and roller rink.

Roller Rink Milkshake: malt chocolate ice cream with a salted caramel ribbon. Flavor inspiration: The Cedar Lake Roller Rink used to sell frozen Milkshake candy bars. The nougat in a Milkshake bar was coated in malt which enabled it to be placed in the freezer and achieve a texture similar to ice cream. 

Vanilla Classic: used as the basis for many of Chef Erik's flavors, vanilla classic is handcrafted and simply delightful.
